Ray’s Andouille Sausage with Brown Rice and Beans

My husband Ray and I have been on a brown rice kick and one evening while I was out working he through this together and absolutely loved it. So from there I improvised with additional ingredients. It’s quick easy and very nutritious. Serve it with fresh veggies and some warm french bread and your good to go.

- 1 package andouille sausage
- 1 can pinto beans (drain very little)
- 1 cup uncooked brown rice
- 1 sweet yellow onion chopped
- 2 garlic cloves chopped
- 4 tbsp. olive oil
Start cooking your rice according to the directions on the bag. Cut andouille sausage into 1 inch coins and set aside. Chop onion and garlic and set aside. In a nonstick pan add half of the olive oil, sauté onion and garlic until soft, set aside. Add the other half of the olive oil, add andouille sausage and sauté to a nice brown. Set aside with onion and garlic. Right before your rice is done add the pinto beans and keep covered until your rice is completely cooked. Add your sausage, onions, and garlic. Stir completely. Serve in bowls with grated cheddar cheese.
Serves: 2 with leftovers for one
