Shirley’s Mashed Potatoes With Mascarpone Cheese

The holiday’s would not be complete without mashed potatoes!  My mother made these mashed potatoes  for our thanksgiving feast and wow they were fantastic!  The mascarpone cheese added a nice light, yet creamy flavor that really enhanced the mashed potatoes.  Mascarpone cheese is a triple cream cheese that is made from a low-fat (25%) fresh cream, evidently it is made from the milk of cow’s that have been fed with special grasses filled with fresh herbs and flowers, this special diet creates the unique taste according to pastrywiz.com.  Now depending on what type of texture you want from your mashed potatoes, will dictate what type of potatoe to use.  Do you want creamy potatoes, lumpy, or smashed?  Click here to learn more, and pick which type of potatoe you’ll use.  Please enjoy!

Peel the potatoes and cut into quarters.  Put them in a large pan and cover with cold water.  Bring to a boil.  Boil for 15-20 minutes or until tender when pierced with a fork.  Drain well.  Using an electric mixer, whip potatoes while gradually adding the butter, then gradually add the cream, a little at a time until the potatoes are light and fluffy.  Mix in salt and pepper to taste.  Blend 4 ounces of mascarpone cheese.
