Pork Mushroom & Snow-Pea Stir-Fry

snow-peasI love to try new things all the time, and enjoy cooking just about every night.  My challenge is during the weeknights, finding recipes that are quick, fast, and most important, delicious.  Well this pork, mushroom, and snow-pea stir fry will certainly go into my recipe box under those categories.  I also picked this recipe because of the three key ingredients; pork tenderloin no matter how you cook it, is always tender (you can’t mess it up).  Cremini mushrooms, also known as the italian brown, have so much more flavor then the white or button mushroom.  Snow-peas, which are so full of vitamins, minerals, fiber, and protein have a lightly sweet flavor.  Also, if your unfamiliar with removing the strings from snow peas, the technique is to snap off the tip of one end of the pod, then pull down the string to the other end of the pod.  My source for this delicious, quick and nutritious pork, mushroom, and snow- pea stir-fry is Sunset magazine.  Please enjoy!

Toss pork with cornstarch and 1 tsp. salt.  Heat 2 tbsp. oil in wok or a 12-inch heavy skillet over medium-high heat until it shimmers.  Stir- fry pork until pale golden and almost cooked through, about 4 minutes, then transfer to a plate. 

Add 1 tsp. of oil to pan and stir- fry snow peas with garlic until crisp-tender, about 1 minute.  Transfer to a plate.

Add mushrooms to pan with water and remaining tbsp. oil and cook, covered, until softened, about 5 minutes.  Add pork, snow peas, and teriyaki sauce and stir-fry until pork is cooked through, about 2 minutes.

Serves:  4

Start to finish:  20 minutes
