Stuffed Chicken Breast Rolls

These stuffed chicken breast rolls are a spin-off from the “Stuffed Beef with Artichoke Stuffing”that I recently shared from the great chef, Tyler Florence. The idea of proscuitto, marinated artichoke hearts, cheese, and fresh herbs, all rolled up into pounded chicken breast’s, browned in the reserved artichoke oil, and braised in white wine, made my mouth water! I have made this twice already and mouth watering it is! I had my butcher give me a chicken breast that was a little over a pound, I then cut it in half down the middle and pounded to 1/2 inch thickness. The stuffing was efffortless to put together, and there was some leftover the second time, so I added it to my scrambled eggs the next day. Please enjoy!

- 1 large whole chicken breast, boneless, skinless, cut in half and pounded to ½ inch thickness
- 1/8 lb. prosciutto, diced
- 6 oz. jar of marinated artichokes chopped, reserve liquid
- 2 garlic cloves, minced
- 2 tbsp. chopped fresh Italian parsley

- 1 tbsp. minced fresh thyme
- 1 tsp. Italian seasoning
- ¼ cup freshly grated parmesan cheese
- ¼ cup freshly grated gruyere
- Salt and pepper
- ½ cup white wine
Prepare your chicken breasts on a flat dry surface. In a medium size bowl, add the rest of the ingredients (except the artichoke oil and wine), combine ingredients thoroughly. Measure about 1/2 cup of stuffing onto wider side of chicken breast and roll tightly. Tie off with kitchen string at 1-1/2 inch intervals.
Add reserved artichoke oil to a non-stick pan over medium heat, and brown your rolls, turning occasionally, until you achieve a nice golden brown. Add white wine, cover, and cook over low heat for 30 minutes. Remove string, and serve with the juices from the pan.
