This was a very delicious dish that was effortless to put together. There are so many versions of chicken and mushrooms, I like mine with a creamy sauce. You can change this up however you like. Chicken Tostadas With Refried Beans and Grilled Fennel
January 30, 2011 | No Comments »
My husband was going out of town for the week, so I promised to make him something special before he left. When he
saw the recipe he just kind of shrugged like no big deal. I said honey just give it a chance, never say never, and can I tell you he loved it! Is that typical for our men or what, whatever??
He especially liked the beans which was why I was looking forward to making this recipe, I have never made refried beans. These refried beans are fresh, low fat, and Read the rest of this entry »
Chicken Rolls Caprese

After all of the richness from the holidays, I was in the mood to make something light for dinner. I love
insalata caprese, a simple salad from the italian region of Campania made of diced tomatoes, basil (I used italian parsley), and fresh mozzarella. It is seasoned with olive oil, salt and pepper (I added garlic as well). So the question was, how would that taste all rolled up into thinly pounded chicken breasts? Read the rest of this entry »

Grilled smokey chicken, smothered with an avocado/cream sauce, all wrapped up in warmed white corn tortillas, simply devine!! After researching the many different ethnic cuisines of India, I learned that India’s cuisine is mostly influenced by religion, geography, climate, culture, and that good indian cooking revolves around the appropriate use of aromatic indian spices. I found this recipe a few months back from my Sunset magazine, and made a few of my own changes. The minute I saw it, I new it would be a dish that I would be making Read the rest of this entry »

Fennel and Chicken Sausage Risotto with Fresh Herbs
September 20, 2009 | No Comments »
I found a recipe for a pancettte and leek risotto from a Williams Sonoma catalog, and while not having a whole lot of experience making risotto from scratch, I decided to make a go of it. Very very easy, a little time consuming but well worth it! It was so tasty that I decided to make my own version and use sausage and fennel as my star ingredients. Read the rest of this entry »
