Panko Crusted Halibut Tacos with a Creamy Avocado Cabbage Slaw

taco-runningI was so excited to make these panko crusted halibut tacos last night, because I new they were going to be really tasty.  And that they were!!  We had dinner with some friends the other night at BJ’s Brewery, when my eyes hit the halibut tacos on the menu, I decided to try them.  I hate to admit this but I’ve never had fish tacos.  They were lightly breaded with panko bread crumbs, and served in warm tortillas with plain shredded cabbage.  On the side was the creamy avocado sauce, and salsa. So I decided I was going to make my own panko crusted halibut tacos, but change it up a bit by combining Read the rest of this entry »

Creamy Coleslaw

red-and-green-cabbageThis year for “Mother’s Day”, we hosted dinner at my house and because the weather was so warm, we decided to barbeque ribs, make chile, and then of course a nice creamy coleslaw seemed so appropriate!  What could be simpler than coleslaw, it’s all about the fresh ingredients and pretty vibrant colors. Cabbage and bell peppers are so good for you.  Cabbage is high in vitamins A, C, E, and B, and is known to reduce headache pain, according to this link here.  Bell Peppers are packed with several nutrients and are promoted for individuals with high cholestrol levels, to learn more, click here.
