Cheddar Green Onion and Walnut Sauce

August 27, 2011 | No Comments »

Last week we grilled pork chops that were marinated in beer.  This sauce like topping of cheddar cheese, green onios, and toasted walnuts was amazing as a finishing touch.  During our warm weather months, we like to barbeque atleast twice a week, so it’s fun to change it up and try different ideas. You can use this topping for just about anything: grilled rib eye steaks, grilled vegies, toasted Read the rest of this entry »

Blueberry cream cheese coffee cake, sounds yummy, huh?  And that it was!  My friend Randy Parsons, a fantastic photographer, shared this recipe with me.  Not too sweet or heavy, but moist, light and as Randy said “tasty”.  It was great by itself, but I think it would be even better with a Read the rest of this entry »

Spinach Salad with a Fig Balsamic Vinegar

June 25, 2011 | No Comments »

From the recipe archives of 2008…it’s finally summer… this salad is a must!!

A perfect salad for a summer evening.  I was so anxious to try this salad after I saw my friend Cherie having it for lunch one day.  The smell of the Fig balsamic vinegar made my mouth water.  It has a wonderful sweet flavor.  This recipe was so easy, healthy and quick for a weeknight supper that I decided to take it a step further and double the dressing Read the rest of this entry »

Quick Tamale Pie

June 12, 2011 | No Comments »

I used to make this years ago, I forgot all about it.  This is a perfect week night meal that is quick and easy!  If you don’t want the beef, substitute it with turkey for a leaner version.  I use the Jiffy brand corn bread mix, which generates just the right amount to cover the entire tamale pie.  What’s great about tamale pie is that Read the rest of this entry »

My husband found this recipe, it was so good that I wouldn’t be doing my job if I didn’t share!  You start by brushing your roast with balsamic vinegar, then a paste of garlic and herbs is spread all over.  The end result, a mouth watering crust that Read the rest of this entry »

Francesca’s Cheesecake

April 24, 2011 | 1 Comment »

My neighbor Joe has has a recipe for a “to die for” cheesecake that his Nonna made for many, many years.  Of course I asked Joe if he wouldn’t mind sharing.  We finally got together and each made our own cheesecake.  It was a fun and easy to assemble recipe that I will be sharing with my family and friends for years to come!

The foundation as Joe called it, is a light Read the rest of this entry »

Beef and Sausage Turnovers

April 10, 2011 | No Comments »

Beef and sausage turnovers, a variation of a recipe I posted back in 2008, “turkey turnovers with fresh mushrooms”.  It’s always fun to change it up, in an effort to try something new.  Using pastry sheets instead of crescent rolls made the overall presentation extra elegant.  We also thought that it was not as Read the rest of this entry »
